The kitchen is considered the heart of any restaurant or cafe. And a chef is a person who makes this heart beat faster. In Russia, before the revolution, if high-ranking ladies liked the dish from the chef, he was invited into the hall and applauded vigorously.
But how exactly to hire a brilliant chef for a job, how not to make a mistake when choosing a candidate, what do you need to know in order to find a true professional? After all, in fact, the skill of this magician will be the key to the success of your cafe or restaurant.
First, you should decide what exactly the style of your restaurant menu will be. Go to nearby restaurants, where the cuisine is similar to yours. And if you like their masterpieces, do not skimp on the compliments and try to get a meeting with the chef, especially since it is very important for him to recognize his own merits. If you were denied for some reason, then ask the staff if this specialist has colleagues.
Place your ad in the relevant headings in newspapers and the Internet, announce the search for a real professional in cooking, invite applicants to demonstrate their capabilities.
In addition, you can visit various contests where chefs compete. You can also chat with the organizers, participants of the competition and find good connections.
One way or another, but when a candidate is found, he needs to be interviewed.
The conversation with the candidate for the position should consist of four parts:
1. Greet the applicant, ask how he got to you, offer to stay at your convenience.
2. Tell us about the purpose of your meeting, introduce your restaurant, while emphasizing the prestige and nationality of the institution. Do not forget to mention the price range.
3. After that, ask the candidate to tell about himself, and let him say what he considers necessary. You need to listen carefully, without interrupting. In this case, pay attention to how a person behaves while doing this: he is relaxed or holding himself somewhat tensely. Understand exactly what he says about his previous work, as well as about his own dishes. Your conversation should be relaxed so that the candidate has the opportunity to relax. Never offer double payment even to the most ideal in your opinion applicant. Better promise that he is guaranteed a career and salary increase.
4. If you immediately see that this applicant does not suit you, then talk about it right away. But you need to say goodbye warmly.
And finally, in order to check how the candidate for the position of chef works, offer him a working day at any time convenient for him. Let him cook dinner at your restaurant for, say, four people. At the same time give him the opportunity to independently create a menu, for example, from five to six dishes.
In addition, you should also be aware of whether this candidate is able to work with technical documentation (interaction with suppliers, development, acts, etc.). And when you finally make sure with your choice, do not forget to congratulate a new employee.
